Couleur, because this wine gives the color of the new vintage 2021 from our biodynamic farm at Château Maris. 2021 was a difficult year for winegrowers yet we still received this nice gift, a wine with bright, tangy, delicious fruit. An airy style, rare in Languedoc.

Rose de Nymphe Émue

The “Cuisse de Nymphe Emue” is a variety of pink rose, a very pale pink pulling slightly on the mauve. It was brought to France at the end of the 17th century, from Crimea.

This coloured Languedoc rosé is a testament to exceptional sunshine. Pressed directly without contact with the skins, it reveals a fleshy pink color worthy of a “Thigh of Nymph Emue”. The nose and mouth confirm this impression through notes of red berries and citrus fruits. A summer rosé par excellence to share with friends.

Zulu evokes the care given to nature, the respect for the spiritual energy surrounding us. It is an organic wine made from the Merlot and Syrah grape varietals and no added sulfites. Lively,  a little salty and juicy, this wine has taken the best from the south of France, a rich fruitiness combined with the taste and good acidity provided by the terroir.

Vinification • The grapes are macerated at 28°C in concrete vats for 3 weeks and fermented at 25°C. Extraction is done by breaking the cap and pumping over. We do not add any sulfites, from harvest to bottling. The wine is then aged in concrete vats for 4 to 5 months.

La Touge

The winding road leading to the plots of Syrah vines located on the terraces at the foot of La Livinière gave its name to this expressive vintage with aromas of black fruits and silky tannins. A singular harmony, with echoes of the surrounding heath. La Touge brings out Life, it is a vintage very representative of biodynamics with a touch of mineral.

Taste : Notes of black fruits, blackcurrant. Inky purple on the glass. La Touge has a full-bodied richness, a beautifully integrated acidity, ripe tannins and no hard edges. A pure sulfur-free Syrah! “Savoir Vieillir” (aging wisely) was born of the desire to offer the best that the earth can produce when it is listened to, respected, and worked intelligently. At Maris, it’s crystal clear: we work with nature, we follow it as much as we guide it. Nature gives back to us. This relative wisdom consists of taking time. The time to do things well. “Savoir Vieillir” is first of all a nod to Cicero and his treatise on old age, a text from Antiquity, so modern in truth. It is also an antidote to the vanity of urgency and inconsistency of things.

Taste : The color is dark purple. The nose is delicate, fresh, with aromas of lively fruit, redcurrant, cherry, and pomegranate. The mouthfeel is moderately concentrated, creamy and lively at the same time, very charming, with notes of blueberry, violet and pepper. A wine of spontaneous pleasure. Aging potential : 2-4 years. Les Planels

If you take the Chemin des Planels, you will walk along vertically-stepped dry stone walls. These walls, typical of La Livinière, serve to mitigate the erosive effects of water and maintain the soil on the terraces where the “Les Planels” Syrah grapes have been grown for over 35 years. Surrounded by pine trees, the vineyard receives ample exposure to the sun and imparts to this vintage generosity and a good structure whose intensity is felt even in its aroma. This vintage fully expresses the typical La Livinière terroir.

Taste : Thyme, rosemary, some menthol notes, a touch of lavender, this aromatic bouquet propels you into the heart of the vine. In the mouth, this sunny wine communicates over the full length of the tongue: a bouquet of already complex aromas with some notes of sautéed black cherries, blackcurrant, licorice, pepper and cold meats. Dark purple color. Rich, full-bodied, yet elegant and seamless, with an impressive texture. An integrated acidity and a beautiful elegance, making you come back to the glass. Las Combes

The highlighting of Grenache grapes at La Livinière, where Syrah is generally favored, reflects Robert Eden’s affection for this grape variety, which he considers to reveal the nuances of the terroir. From the plot known as Las Combes, an old vineyard shaped like a goblet, this Grenache displays a unique personality, with tremendous potential for maturing in the bottle. Initially full of finesse, it then continues to increase in power while developing a complex palette of subtle aromas (candied fruit, black olive, chickpea).

Taste : The color is dark purple. The nose is elegant, with notes of ripe and tangy fruit (pomegranate, cherry, black currant) and roasted coffee beans. This Syrah without added sulfites reveals the beauty of the terroir composed of clay and sandstone of La Livinière. From old vines facing south-east, the wine has a unique personality, speaking of fruit and spices. (Formerly “Savoir Vieillir”)

Les Anciens

Born from nearly 100-year-old grapevines facing south above the village of La Livinière, this Carignan vintage is an ode to our oldest grapevines. Witnesses to the development of the vines, the plots are strewn with dry stones and dominated here and there by “capitelles”, the stone shelters so characteristic of La Livinière, where the winemaker could seek shelter from the wind or store his tools back in the day.

Dynamic

A thoroughbred! Dynamic is a pure Syrah from our best vineyards located in the hills (near Siran) of La Livinière. It is a great wine with a very limited yield, aged in barrels for 16 months. Dynamic combines power and finesse. “It is an elegant, subtle wine, in which we always include a touch of 10 to 15% non-wooded Grenache Noir, which seems to us to guarantee slower maturing and therefore better resistance over time”. Taste : Dynamic offers an impressive nose of smoked black fruits, melted licorice, blackcurrant and dried meat. Its inky color with hints of purple announces a rich, creamy, and remarkably invigorating mouthfeel. A long balsamic finish underlines its magnificent balance. Les Amandiers

A sublime picture. That’s what the small plot of Syrah offers in the spring when the Almond trees of La Livinière are in bloom. This exceptional vintage has a very limited yield. Made predominantly with Syrah grapes, this wine offers a bouquet of already very complex and magnificent aromas, with notes of black fruit such as blackcurrant, white flowers, and licorice.

Taste : A wonderful bouquet of black fruit, blackcurrant and blackberry aromas, with notes of white flowers, wet rock and licorice. The mouthfeel is full, powerful, and caressing.
